      The six-course tasting menu is inspired by flavors from Japan, Italy, Spain, and the Pacific. Start with the Salmon Belly Hand Roll, which sees smoked salmon roe atop a bed of tender salmon belly and rice sprinkled with furikake. The richness of the seafood combined with the umami flavor of the seaweed makes this a perfect starter to whet the appetite. For mains, opt for the Salmon Kimchi. The miso marinade gives the dish a briny, refreshing taste that is tempered by the heat of the kimchi. The addition of wakame gives the dish a light crunch that adds depth to the medley of textures.

      For a sweet treat to end the meal, try the Passionfruit Pavlova, a light meringue dessert topped with fresh gooseberries, a light sorbet, and a rich coconut cream. (October 2019)
