The only place in central Singapore where you can customize & barrel-age your spirit from scratch
Compendium Spirits, the well-loved craftmaster of #madeinSG quality spirits and flavours, has finally set up an iconic home in the heart of Singapore.
Named “Anthology”, the three-story heritage shophouse is where the open-minded can explore the world of Compendium Spirits and taste its full range, including limited edition releases.
However, Anthology is more than a showcase of products. Over here, the team’s core mission is to share their honed expertise and knowledge from years of research and experimentation in spirit production. Therefore, the Anthology experience includes carefully curated learning experiences, from exclusive themed workshops to customizing and barrel-aging spirits from scratch.
We chose the name Anthology as this will be where we showcase our various compendiums of spirits, chapter by chapter. Since our journey started in 2015, our simple philosophy has always been to balance old-world knowledge and new-age thinking with experimental boldness. Anthology will be our iconic home where we welcome everyone who steps in to understand our journey and be part of it.
Compendium Spirits’ journey started in 2015 when Simon Zhao, master distiller and co-founder of Compendium Spirits, embarked on Rachelle The Rabbit Meadery to create exceptional, flavourful meads, an uncommon beverage choice in Southeast Asia, for locals to experience and enjoy. Since then, the team has applied their knowledge to traditional methods of creating the world’s favorite spirits, arriving at a compendium of spirit recipes that boasted a smooth mouthfeel while retaining the full flavors of ingredients used, from the well-loved Chendol Gin and Teh-O Liqueur to whiskey made from Thai hom mali rice.
For the curious, this will also be an exciting playground for educational experiences. Tasting flights are specially curated to take customers on a learning journey from ingredients to methods in spirit production. The Chartered program, which offers customers the chance to make bespoke barrel-aged spirits at Anthology’s cellar, is a one-of-a-kind experience that gives you a taste of being a master distiller and blender.
Level 1: World of Compendium Spirits
At Level 1, guests can immerse themselves in tasting Compendium Spirits’ full collection. For the curious, this is a wonderland for understanding the evolution of ingredients. A must are the Vertical Tasting Flights, such as the Rice flight ($42), which offers a tasting of rice as a wine, as a new-make spirit, and finally as an aged whiskey in two forms. Other flights include Honey ($22), Coconut ($23), and Sugarcane($38).
The Horizontal Tasting Flights, with themes such as Fermentation ($15), Distillation (pure spirits, $35), Distillation (infused spirits, $32), and Aged (pure spirits, $40) offer the perfect tasting experiences for understanding the production process.
For Anthology’s opening chapter, Dannon Har, Brand & Beverage Director of Compendium Spirits, has designed a collection of cocktails inspired by classics and based on the concept of allowing the base spirit to shine.
Teh-groni ($21) is based on the well-loved negroni, using the Compendium Spirits Teh O Liqueur, Campari, earl grey tincture, and finished off with a spray of lavender citrus. For a refreshing sip, the Meadmosa ($20, Apricot Tea Mead, orange juice, pomelo syrup, brut Champagne) will charm with its citrus tones; while the Rojaktini ($24), a composition of rojak gin, bianco vermouth, pink peppercorn infusion, and orange bitters packs a Southeast Asian punch.
For those who are up for a bit of fun, the Anthology Somaek ($18) awaits – Pick a fermented alcoholic beverage and then a soju from the Compendium Spirits range, mix them together and enjoy.
Level 2 & Level 3: Chartered Private Lounge & Barrel Cellar
Chartered Private Lounge, an intimate space filled with leather couches and plush lounge chairs is exclusively dedicated to Chartered members to imbibe their bespoke barrel-aged spirit.
Chartered by Compendium Spirits is a program introduced in 2022 where guests can customize their own spirits and flavors and barrel-age them at the distillery in Mandai, with the expertise of master distiller Simon Zhao. The encouraging response motivated the team at Compendium Spirits to bring this program to an accessible location, so more guests can easily experience this at their own convenience.
Here, guests can pick their ingredient of choice for the base spirit at an introductory workshop and tasting session with the team at the Chartered Private Lounge. The final spirit will be barrel-aged at the temperature and humidity-controlled Chartered Cellar on Level 3 to the guests’ preference.
The team of mixologists at the Private Lounge can withdraw some of the spirits from the barrel and create customized cocktails according to individual preferences on the spot.
Anthology Food Menu
The food at Anthology also draws inspiration from Southeast Asian flavors, such as Braised Duck Rillettes with croutons are made in-house, seasoned with Asian spices and topped with chopped chives, or the sweet and aromatic Crab Salad with Ginger Crisps ($24). The highlight is the robust Beef Short Ribs Char Siu, a hearty bite paired with homemade rice crisps. The vegetarian Coconut Fried “Chicken” ($28) topped with deep-fried coconut and rice cooked with aromatics will convert even the non-vegetarians.
Workshops & Craftsmen Collaborations
As the iconic home of Compendium Spirits, there will also be spirits appreciation and cocktail-making workshops conducted, as well as blending masterclasses for those seeking an in-depth experience. Anthology is also a space dedicated to celebrating the spirit of craft and will be collaborating with like-minded craftsmen – from florists, tea artisans to print-makers. Guest shifts by mixologists, cocktail workshops, and spirit tastings will also be a regular feature. (Aug 2023)
