    It's not everyday you can say you're escaping to the countryside in manic Singapore, but take a car or bus ride into the quiet stretches near Seletar Airport and you'll find empty fields, lush tropical greenery, and The Summerhouse, a new restaurant, bar, and cafe that's housed within a colonial-era Royal Airforce Bungalow. Amidst the hilly greenery of the surrounding landscape, there's a high chance that you'll forget you're in Singapore, though the food and drinks here, created by a team led by Chef Chris Millar, will remind you that you're in one of the world's great dining cities.

    Crafted in partnership with farming communities in Singapore and farther afield, and topped off with produce from an on-site organic garden, this is a gourmet restaurant with a heart for nature. Leveraging on Singapore's constant sunshine to create the feeling of eternal summer, flowers and herbs from the garden are used to adorn the plate and each mouthful bursts with sun-ripened, sustainably-sourced flavours.

    Kelong-farmed grouper is served with an elegant pesto of farm-fresh carrot, orange-kissed hollandaise, and a garnish of garden nasturtiums. Seasonal farmed sea urchins from France are turned into a gelato-like ice cream, flavoured with soy sauce and topped with briny ikura and toasted nori, while beautiful Australian Mayura beef is rendered smoky and tender with an Inka grill before being served up with pickled pumpkin, local mushrooms, and an earl-grey infused jus.
