    Think you know your biryanis? Think again. You’ve never tasted good biryani until you’ve tried the ones that come out of Hyderabad. But if a plane ride to India is too much hassle for a taste of the good stuff, Mr Biryani at Little India will sate your appetite. Helming the kitchen is chef Govinda Rajan, who expertly presents Indian staples to the local palate in a range of curries, stews and of course, the namesake Dhum Biryani.

    Best eaten with your fingers, the biryani here is cooked using the dhum method, where ingredients are layered in a pot and steamed together, sealed shut by a lid bordered with strips of dough. The meat is marinated overnight, and the entire pot is then slowly cooked so that all the aroma and flavour are absorbed into the rice.

    This results in a biryani with rice that’s delicate, fragrant and light, incorporating fork tender meat that’s both smoky and succulent. Our favourites include the Hyderabad Chicken Dhum Biryani, with chicken marinated in ginger, garlic, spices, fresh mint and coriander, fried onion, and yogurt. If you prefer lamb, try the Lamb Shank Biryani, which has been cooked with biryani masala. Want something light? A local creation, the Kueh-Pie-Tee Cup is a curious combination of paneer, topped with mint and a sweet and spicy chutney. (Feb 2020)
