Inspired by the origin of flavours, travel adventures and Singapore's illustrious history of bountiful trade, colonial charm and tropical splendor, Origin Grill is the latest addition to Shangri-La Hotel Singapore's list of exemplary F&B establishments. Produce and ingredients are carefully sourced from South East Asia and woven together by skilled chefs and bartenders with the aim to evoke the guests' memories of travels past or the desire to embark on a new voyage.
At Origin Bar, timeless and ingenious convene through cocktails inspired by five key districts of Singapore, namely: Orchard, Chinatown, Little India, Boat Quay and Marina Bay. The bar manager, Slovakian native Adam Bursik, has carefully concocted each cocktail to reflect the colours, flavours and historical anecdotes of the different neighbourhoods, such as the namesake Origin, a spicy gin-based cocktail made with sugar cane honey, nutmeg, pepper, charred pineapple and lime husk wine.
Origin Grill, adjacent to the bar, showcases fresh, authentic flavours from curated, unique and quality-driven ingredients. Hailing from Sydney, Australia, Chef de Cuisine Heidi Flanagan crafts courses from sea and land - such as line-caught sustainable seafood from marine-certified coasts in New Zealand and the Philippines, and a bespoke beef selection featuring grass and grain-fed pure, crossbred and full-blooded Angus and wagyu cattle from Australia, Ireland and Japan. "Origin Grill offers selected exclusive wagyu options: the 500-day Japanese diet-fed Shiro Wagyu, Marble 9; and snow-aged full blood wagyu beef A4 from Niigata, Japan. For the latter wagyu, its ageing process requires a consistent internal temperature between zero and five deg C - in a state called seichi - which causes the meat to keep more than 90 per cent humidity, thus retaining its freshness." -The Straits Times
